Okanagan Autumn Porridge

1 large carrot, shredded
1 apple, core removed, chopped into thin small slices
(I put the apple and carrot into a food processor)
1 cup wheat-free oats (I use Only Oats)
2 cups water or rice milk for the oats
1/2 cup walnuts or pecans – or both!
1/2 tsp cinnamon
1/4 tsp nutmeg
2 tsp flaxseeds freshly ground (or flaxmeal)
1 tbsp REAL maple syrup (optional)

Following the instructions on your packing of oats to cook them OR you can go mostly raw and soak them overnight and then warm them up on low temperature in the morning to optimize saving nutrients. Then combine the rest of the ingredients together and enJOY!
This recipe makes enough for 2 people to have a nice big heart warming breakfast treat and therefore should be eaten on a special occasion, like Sunday family breakfast
